A culture deeply rooted in food & gastronomy coupled with a significant rise in startup investment has allowed France to become a fertile ground for food innovation. The French EIT FAN hub is implemented by the local reference in terms of Food and Ag Tech innovation, ShakeUpFactory, and located in the heart of Paris at Station F - the biggest startup campus worldwide.

- Novel natural ingredient sources: plant based, algae, fungi, insects
- Novel process technology (incl. fermentation but excl. cell ag and precision fermentation)
